Salsa

It's pretty easy to adjust this recipe if you like your salsa hotter.  Ingredients: 2 bell peppers (red, yellow or orange), seeded and diced 1 medium onion, diced 3 cloves garlic, minced 1 can (14.5 oz) diced tomatoes, drained 1 tablespoon olive oil 2 tablespoons lemon (or lime) juice 1 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon black pepper Optional: 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, any kind of Tobasco or other hot sauce if you want a kick Instructions: In a large skillet, heat the olive oil over medium-high heat. Add the diced bell peppers and onion and sauté for about 5-7 minutes, or until they start to soften. Add the minced garlic and sauté for an additional minute, or until fragrant. Remove the skillet from heat and let the mixture cool slightly. In a blender or food processor, pulse the drained diced tomatoes until they reach your desired consistency.
